A comforting, warm breakfast on a cold, winter day. This is one of my favorites for breakfast - a recipe that we have been enjoying in our home for quite a few years. The dates add a sweetness and richness to the oatmeal, and the chopped nuts are a nutritious addition, too.
Cinnamon Date Oatmeal
2 cups old fashioned oats
1/4 cup sugar (or fructose)
1/3 cup nuts, chopped (my favorite is pecans)
1 cup chopped dates
3/4 teaspoon salt
3/8 teaspoon cinnamon
4 1/2 cups water
Directions:
Mix all ingredients in saucepan.
Bring to a boil, stirring constantly, until thickened.
To Serve:
Dish out the amount needed for a single serving, add milk, stir, and enjoy!
The additional oatmeal mixture keeps well in the refrigerator.
