Cheddar Chicken and Potatoes

A new recipe I tried a few months ago ... only four ingredients, and a meal all in one dish! We loved it! I need to make it again soon.

Cheddar Chicken and Potatoes

4 slices bacon
4 small boneless skinless chicken breast halves (1 lb.)
4 cups (1 lb.) frozen diced potatoes with peppers and onions, thawed
1 cup (4 oz.) shredded cheddar cheese (sharp)

Cook bacon in large nonstick skillet on medium heat 5 min. or until crisp. Remove bacon from skillet to paper towel; discard drippings in skillet (if desired). 

Add chicken to skillet; cook 5 min. on each side or until done.


Remove chicken from skillet; cover to keep warm. Crumble bacon. Add to skillet with potatoes; cook and stir 5 minutes or until heated through.


Place chicken over potatoes; top with cheese. Cover; cook 2 minutes or until cheese is melted.

Yield: 4 servings
