Creamy Ham 'n' Macaroni

Looking for a comforting winter dish? Here's a pleaser, for sure ...


I discovered this recipe a few years ago, and it has become one of my favorites to serve when the grandkids come over for an overnighter. It never fails - kids love macaroni and cheese, and this recipe has the addition of ham, as well. A complete meal in the eyes of children!

Creamy Ham 'n' Macaroni

Course: Main Course
Serves: 6

Ingredients

  • 2 cups elbow macaroni uncooked
  • 1/4 cup butter cubed
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 4 teaspoons chicken bouillon granules
  • 1/4 teaspoon pepper
  • 2 cups cheddar cheese shredded, divided
  • 1-1/2 cups ham, fully cooked cubed
  • 1/4 cup Parmesan cheese grated

Directions

  1. Cook macaroni according to package directions; drain and set aside. In a large saucepan, melt butter over low heat; whisk in flour until smooth. Whisk in the milk, bouillon and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir in 1 cup cheddar cheese, ham, Parmesan cheese and macaroni.
  2. Transfer to a greased 2-qt. baking dish. Sprinkle with remaining cheddar cheese. Bake, uncovered, at 350° for 20-25 minutes or until bubbly. Let stand for 5 minutes before serving. Yield: 6 servings.

I served this earlier this month when we had two grandkids over for two nights ... five year-old Cruz, and one year-old Eva loved it. Another grandkid who lives nearby was over for supper one of those days, as well (six year-old Ali), and it was a hit with her, too. You can't go wrong with mac 'n' cheese for children.
