Crunchy Apple Salad

Oh, this salad is delicious! I just tried this new recipe for the first time this past week, and it is definitely a keeper. I love the crunchy apples, peanuts, and bagel chips, and together with the homemade dressing, it is a very tasty salad. Perfect as an addition to a meal, or also delicious as a salad lunch on its own.


Crunchy Apple Salad

2 packages (5 ounces each) spring mix salad greens (or any combination of greens)
2 large apples, chopped
2 cups bagel chips, coarsely broken up (I used New York Style Bagel Crisps Everything)
1 1/2 cups honey-roasted peanuts
1 cup (4 ounces) crumbled blue cheese

Dressing:
1/3 cup sugar
1/3 cup canola oil
1/4 cup cider vinegar
1 tablespoon poppy seeds
1 1/4 teaspoons dried minced onion
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon paprika
1/8 teaspoon pepper

Directions:
In a large salad bowl, combine the first five ingredients.
In a small bowl, whisk the dressing ingredients.
Drizzle over salad; toss to coat.

Yield: about 8 servings
