Pizza English Muffins


Just tried out this recipe for supper tonight - and it is definitely a "keeper"! It went perfectly with our salad of freshly picked spinach, lettuce, and radishes from our garden (and tomatoes and cucumbers from the store). An easy recipe, and one which will freeze well - looking forward to making more in the future.

Pizza English Muffins

1 pound lean ground beef
3/4 pound bulk pork sausage (I used 1 pound)
1 small onion, chopped
1/2 cup tomato paste (I used the whole 6 oz can)
1/2 teaspoon garlic salt
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper
3 packages (12 oz each) English muffins, split
1 1/2 cups shredded mozzarella cheese
1 cup shredded cheddar cheese
1 cup shredded Swiss cheese

In a Dutch oven, cook the beef, sausage and onion over medium heat until meat is no longer pink; drain. Stir in the tomato paste, garlic salt, oregano and cayenne. Spread over the cut side of each English muffin. Place on baking sheets. Combine the cheeses; sprinkle over meat mixture.

Freeze for up to 3 months or bake at 350 degrees for 15 minutes or until heated through.

Yield:  3 dozen

To use frozen Pizza English Muffins: Bake at 350 degrees for 30 minutes.

Your industriousness is making me feel a bit lazy but I am going to pray about that because hopefully the Lord will tell me to quit comparing myself with others!   2. This is a sweet memory for me. When we first got married (ages ago) Dave was busy in youth ministry and I was teaching first grade full time. Quick pizzas on English muffins showed up on our menu regularly.

    Must be time to pull that recipe out again.
