We don't have salmon on our menu very often, but recipes like this one remind me that we need to have it more often. My hubby and I enjoyed this menu recently - so very delicious. I will need to keep a bag of frozen salmon (each individual serving fillet packaged separately so it's easy to just pull out the exact amount needed) on hand in our freezer for recipes such as this one. (I purchased mine from Sam's.)

Grilled Spiced Salmon

Course: Main Grill
Serves: 6
Ingredients
- 3 tablespoons brown sugar
- 1⁄2 teaspoon garlic powder
- 1⁄2 teaspoon ground mustard
- 1⁄2 teaspoon paprika
- 1⁄2 teaspoon pepper
- 1⁄4 teaspoon dill weed
- dash salt
- dash dried tarragon
- dash cayenne pepper
- 2 tablespoons butter melted
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 salmon fillet (2 pounds)
Directions
- In a small bowl, combine the first nine ingredients (through pepper).
- Add the butter, oil and soy sauce; brush over salmon
- Coat grill rack with cooking spray before starting the grill.
- Place salmon skin side down on rack.
- Grill, covered, over medium heat for 10-15 minutes or until fish flakes easily with a fork.
- Yield: 6-8 servings
