A very sweet dessert ... but so good! I've tried substituting some of the sugar with fructose, and it just does not turn out the same. So, I continue to make this recipe just as written. It has such a fresh, spring-like taste ... perfect to add to special meals this spring and summer.
Delicious Lemon Squares
2 cups flour
1 cup butter, softened
2 1/2 cups sugar
4 eggs, slightly beaten
2 teaspoon grated lemon rind
6 Tablespoons lemon juice
1/2 teaspoon salt
4 Tablespoons flour
1 teaspoon baking soda
Blend 2 cups flour, 1 cup butter, and 1/2 cup of sugar in a small bowl.
Press into a 9x13 inch pan.
Bake at 325 degrees for 20 minutes.
Beat eggs in bowl. Add 2 cups sugar and the remaining ingredients.
Beat until well blended.
Spread over crust, and bake for 25 minutes.
Cool in pan.
