I usually serve roast with potatoes and carrots, but decided to serve sweet potatoes and green beans (with a sprinkling of bacon pieces) as the side dishes, instead. It turned out to be a delicious meal for this cool, autumn weather that we are experiencing these days.
Roast Pork with Apples & Onions
1 boneless whole pork loin roast (about 3 lbs.)
1/4 teaspoon salt
1/4 teaspoon pepper
1 Tablespoon olive oil
3 large Golden Delicious apples, cut into wedges
1 or 2 large onions, cut into wedges
4 garlic cloves, minced
1 teaspoon dried rosemary, crushed
1/4 teaspoon pepper
Sprinkle roast with salt and pepper.
Brown roast in oil on all sides in a large nonstick skillet.
Place in a shallow roasting pan coated with cooking spray.
Arrange apples, onions and garlic around roast; sprinkle with rosemary.
(Optional: I like to add a bit of water, maybe 1/8 to 1/4 cup.)
Bake, uncovered, at 350 degrees for 1 1/4 to 1 1/2 hours (or more) until well done.

This recipe will be kept in my collection of favorites from now on. We loved it ... the pork was so tasty, flavored with the apples, onions, and seasonings.
