A delicious muffin recipe that I clipped years ago from a Taste of Home magazine. I made them again this past weekend - loved the aroma of fall that filled the house as they were baking!
Oatmeal Apple Raisin Muffins
1 egg
3/4 cup milk
1 cup raisins
1 chopped apple (aprox 1 cup)
1/2 cup oil
1 cup all-purpose flour
1 cup quick oats
1/3 cup sugar
3 teaspoons baking powder
1 teaspoon salt
1 teaspoon nutmeg
2 teaspoons cinnamon
(I like to substitute whole wheat pastry flour for part of the flour, and also substitute fructose for part of the sugar.)
Beat egg; stir in remaining ingredients, mixing just to moisten. Pour into 12 greased muffin cups until 3/4 full. Bake at 400 degrees for 15-20 minutes. Serve cool or piping hot with butter.
Yield: 12 muffins

Enjoy - and share with those you love! A daughter and two grandsons came over shortly after I made these, and we shared some of these muffins together. Also, I sent some home with her, and put some in the freezer for enjoying later. (I tripled the recipe when making them this past weekend.)

The look & sound delicious! Just may have to try them. I have all of these ingredients and they sound really close to the raisin bran muffins, but I never buy this cereal. So really will be more convenient to use this recipe.
